With football season here now, and the holidays right around the corner, there will no doubt be a ton of entertaining in our home. My absolute favorite part of get-togethers, whether they be formal or casual, is the food. I love to get creative with snack foods that can be served as either appetizers or as entrees if needed.

One of the ways that I mix up our usual spread is to use Kraft Fresh Take. The blend of seasoned breadcrumbs and fresh cheese can take almost any dish to the next level when added to chicken, pork, fish or beef.

For awhile now my husband has been craving Shepherd's Pie— I've racked my brain a bit on how to make this dish without spending hours in the kitchen. Then it hit me! I can make a mini Shepherd's Pie Cupcakes with Kraft Fresh Take, ground beef, frozen veggies and biscuits! The recipe came out better than I imagined and I will now be serving these on Game Days and other occasions that call for yummy finger foods.

  • 1 Pound Ground Beef
  • 1 ½ Cups Frozen Mixed Vegetables

  • 2 Tablespoons Milk

Directions:

  1. Pre-heat oven to 375 degrees
  2. In a large saucepan, cook 1 pound ground beef at medium-high heat until browned. Drain if necessary. Lower heat to medium-low and add 1.5 cups frozen mixed vegetables, ¾ of the breadcrumbs from the package Cheddar Jack & Bacon Kraft Fresh Take and 2 Tablespoons milk. Stir until the breadcrumbs and veggies are even throughout and cook until meat is well done.
  3. Mold biscuits into the shape of each cup in cupcake pan.
  4. Sprinkle a little cheese from the package of Kraft Fresh Take into the bottom of the molded biscuit.
  5. Add ground beef mixture into each cup until it is level with the pan (don't overfill).
  6. Bake in oven for 10-12 minutes until biscuits are browned.
  7. Add mashed potatoes to a gallon sized bag with a corner cut off and pipe approximately ¼ cup mashed potatoes on the top of each "cupcake".
  8. Sprinkle each cupcake with extra cheese and breadcrumbs from Kraft Fresh Take.

My husband and daughter RAVED about my new version of Shepherd's Pie— the whole batch was gone in no time. We ended up eating the cupcakes for dinner, but I can't wait to make them again as snacks for a crowd!

Using Kraft Fresh Take is not only easy to use, but it saved me time and added a different flavor element to the Shepherd's Pie Cupcakes. I decided to go with Kraft Fresh Take Cheddar Jack & Bacon because everyone in my family loves the smokey bacon flavor. Though, I think any of #FreshTakevarieties could be used with great results.

Classic shepherd's pie is made with ground lamb, gravy, mashed potatoes, and veggies like peas, corn, celery, and carrots. Why is my shepherd's pie soggy? Avoid a soggy pie by simmering the meat mixture for at least 8 minutes. Be sure to cook down the mixture to remove excess moisture.

Why is Shepard's pie called Shepherd's pie? ›

Shepherd's pie was attributed to a similar Scottish dish that used lamb or mutton rather than beef. Shepherd's herded sheep, hence the name. The textured, mash potato topping also resembles the woolly fleece of a sheep.

Why is shepherds pie called chinese pie? ›

Most workers ate their meat, potatoes and corn separately but workers of mainly Asian origins, combined their rations to create shepherd's pie, a more communal dish. The French-Canadian railway workers liked this new concoction, adopted the dish, and called it “pâté chinois”, which loosely translates to Chinese pie.

What can I use to thicken my shepherd's pie? ›

The easiest way to thicken shepherd's pie filling is by sprinkling a few tablespoons of flour into the ground beef mixture as it cooks before adding it to the baking dish. The starch in the flour will absorb the extra liquid and create a thick gravy.

Should I bake the bottom pie crust first? ›

You do not need to pre-bake a pie crust for an apple pie or any baked fruit pie really, but we do freeze the dough to help it stay put. Pre-baking the pie crust is only required when making a custard pie OR when making a fresh fruit pie.

How to make shepherd's pie less soupy? ›

Why is my Shepherd's Pie soupy? If your casserole is too runny, chances are you either didn't add enough flour to thicken the gravy or you didn't simmer it long enough to reduce the liquid. Also, make sure your potatoes are thoroughly drained before making the mashed potatoes, so the topping is not too sloppy.

What ethnicity is shepherd's pie? ›

shepherd's pie, dish of British Isles origin that makes use of vegetables and chopped meat cooked in a casserole topped with or surrounded by mashed potatoes.

Why does shepherds pie not have a crust? ›

Is cottage pie and shepherd's pie the same? ›

The main difference between Cottage Pie and Shepherd's pie is cottage pie uses ground beef, and Shepherd's pie uses ground lamb. Both pies are cooked with vegetables and gravy and baked under a layer of mashed potatoes. To make Shepherd's pie using this recipe, simply substitute ground lamb.

Can I substitute cornstarch for flour in shepherd's pie? ›

It's easy to substitute cornstarch for flour when your recipe calls for a thickener (as in gravy, sauce, or pie) or a coating for fried foods. Whether you don't have flour on hand or are looking for gluten-free alternatives, cornstarch has a similar effect in these cooking applications.

Can I freeze shepherd's pie? ›

Wrap cooled pie in a layer of plastic wrap, followed by a layer of heavy-duty aluminum foil. Label with contents and date; place in freezer. For best quality, serve within 2-3 months; however, shepherd's pie will remain safe indefinitely, stored at 0° F. When ready to eat, thaw for about 24-hours in the refrigerator.

How do you keep shepherd's pie from falling apart? ›

How do you keep shepherds pie from falling apart? The eggs in the mashed potatoes help keep the pie together. You should also make sure to spread the potatoes and press down a bit.

How do you keep pie base from going soggy? ›

Blind-bake your base before adding a filling to help to firm the base and avoid liquid being absorbed into it. Prick the base with a fork to help steam escape, cover with foil or parchment, and weigh it down with ceramic baking beans, uncooked rice or white sugar. Then bake at 220°C (425°F) for 15 minutes.

Why is my pie mushy? ›

If the bottom crust doesn't set before the filling soaks in, it's going to be gummy. A metal pie pan placed on a preheated surface will set the bottom crust quickest; once cooked, the liquids from the filling above won't soak in, and as a result: no soggy bottom.

How can I make my pie more firm? ›

All-purpose flour is an easy solution, as you're sure to have it in your pantry. Since it's lower in starch, you'll use more of it than you would higher-starch thickeners. Quick-cooking tapioca makes filling bright and clear, but also gives it a stippled and somewhat sticky texture.

Why did my pie turn out watery? ›

Allow your pie to bake for the entire recommended period.

People often pull their pie too soon out of fear that it will burn. This leads to runny pie because it prevents the filling from thickening. Check the recommended cooking time, and set a timer. Don't use the brownness of your pie crust to judge if it is done.
