An easy Taco Soup Recipe that is made quick and easy in the Instant Pot in a matter of minutes. This delicious hearty soup is made with ground beef, tomato paste, diced tomatoes, beans and more to create a favorite family recipe

In the Fall and cooler months I love to enjoy a hearty bowl of Taco Soup with tortilla chips, salsa, and sour cream on top. Just like I also adore a large plate of Taco Salad all summer long. They are just classic recipes I grew up loving and still make for my boys.

This recipe is so easy to make in under 30 minutes in the Instant Pot electric pressure cooker and of course can also be made in the Crock Pot Slow Cooker too.

Shopping List Instant Pot Taco Soup

Ground Beef: I prefer a lean ground beef of 90/10

Vegetables: Corn, Tomatos, Chilies

Seasonings: Taco Seasoning or use a homemade blend

Broth: Beef Broth gives a rich flavor

Substitutions:

For healthier versions of Taco Soup try substituting Ground Turkey. Adding additional vegetables like bell peppers and additional flavor too. Try adding additional beans like black beans or pinto beans. Adding a diced jalapeno will give a nice bit of heat or choose a pepper with the heat index you prefer.

This soup is easily a heart soup for a thinner soup add additional broth. I also prefer to add broth when reheating.

How to make Taco Soup Instant Pot

Turn Instant Pot to Saute and wait until it reads hot. Add Olive Oil and ground hamburger to pot and saute breaking up ground beef into small pieces.

Dice vegetables and add to ground beef. Mix ingredients together using a wooden spook or silicone spatula.

Deglaze bottom of pot by adding some broth and scraping any stuck bits from the bottom liner. This is an important step and is easy to do.

Top with diced tomatoes, beans, corn and add remaining broth. Sprinkle taco seasoning on top and close lid. Set cooking time on the pressure cooker to high pressure for 5 minutes allowing a quick release when completed.

Open lid and stir ingredients together. It smells delicious. Add your favorite toppings and serve.

How to garnish Taco Soup

Some of my favorite ingredients to garnish Taco Soup with are

  • Tortilla Chips
  • Cilantro
  • Avocado
  • Cheese
  • Sour Cream
  • Dice Jalapeno
  • Hot Sauce

The key to a delicious soup is a long slow simmer allowing all the natural flavors of the fresh ingredients to meld together perfectly. Plus your house smells amazing and gets you all excited for dinner to come.

But that is not always possible which is why I LOVE my Instant Pot. When cooking with an electric pressure cooker, you can achieve the same fantastic flavors of a slow simmer without the long cooking time.

Can I freeze Taco Soup

Taco Soup can be frozen for up to 3 months. Place soup on counter to thaw at room temperature for 1 hour and heat on medium heat until warm.

Try freezing soup and other leftovers in SouperCubes a silicone tray with a sturdy lid. Items are easily removed from container. I have been using these trays for meal prep and to freeze leftovers and I love them. They come in different sizes to fit your needs.

Taco Soup

Instant Pot Taco Soup Recipe is a delicious hearty soup made with fresh ingredients. Tastes like it has slow simmered all day long in a fraction of the time.

Ingredients

  • 2 tablespoons Olive Oil
  • 1 lb Ground Hamburger - 90/10%
  • ½ Cup Diced Onions
  • 1 tablespoon Minced Garlic
  • 2 Cup Beef Broth
  • 2 tablespoons Tomato Paste
  • 14.5 ounce Diced Tomatoes - 1 can
  • 4 ounce Diced Green Chilies - Mild, Medium or Hot
  • 8 ounces Tomato Sauce
  • 1 can Kidney Beans - rinsed and drained
  • 1 can Sweet Corn - rinsed and drained
  • 1 pkg Taco Seasoning Mix - Dry Seasoning Packet

Garnish

  • Sour Cream - optional
  • Cheese - optional
  • Tortilla Chips - optional
  • Avocado - optional
  • Hot Sauce - optional

Instructions

Instant Pot / Electric Pressure Cooker

  • Turn Instant Pot to Saute and wait until it reads hot. Add Olive Oil and ground hamburger to pot and saute breaking up ground beef into small pieces.

  • Dice vegetables and add to ground beef. Mix ingredients together using a wooden spook or silicone spatula and continue to cook

  • Cook until ground beef is crumbled. Hamburger will finish cooking during pressure cooking

  • Deglaze bottom of pot by adding some broth and scraping any stuck bits from the bottom liner. This is an important step and is easy to do.

  • Top with diced tomatoes, beans, corn and add remaining broth. Sprinkle taco seasoning on top and close lid. Set cooking time on the pressure cooker to high pressure for 5 minutes allowing a quick release when completed.

  • Open lid and stir ingredients together. Add your favorite toppings/ garnish and serve.

Stove Top Directions

  • In a large stock pot over medium/high heat, dump cooked hamburger and onion mixture, drained kidney beans, drained corn, and 29oz of Tomato Sauce.

  • Stir in Taco Seasoning and reduce heat to medium/low allowing to simmer for 15 minutes.

Garnish

  • Serve with cheese, sour cream, and crushed tortilla chips.
