There is just something so comforting about a hot and delicious bowl of soup. It warms you through and through from the first sip, and has a way of making you feel content.

Soup is too good not to share, so whenever I make a big pot I always package some up to take to family or friends. Especially if someone is feeling down or going through a challenging time, sharing some soup is a great way to show how much you care. It is an easy and satisfying meal to just reheat and eat, and it gives you that comforted feeling of warmth and contentment.

To enhance the flavor of this soup I added a deliciously bold, full-bodied wine by Gallo Family Vineyards. Gallo'sCabernetSauvignonnot only elevates the flavor in the soup, but is a great pairing with the soup and compliments the cheese nicely.

Cheesy French Onion Soup Recipe #SundaySupper (6)

Ingredients

  • 4 tablespoons unsalted butter
  • 1/2 teaspoon kosher salt
  • 2 large red onions, thinly sliced
  • 2 large yellow onions, thinly sliced
  • 6 cups of water
  • 2 tablespoons beef base such as Better Than Bouillon
  • 1/2 cup Gallo Cabernet Sauvignon Wine
  • 1 tablespoon Worcestershire Sauce
  • 2 sprigs fresh parsley
  • 1 sprig fresh thyme
  • 1 bay leaf
  • 1 tablespoon balsamic vinegar
  • salt and freshly ground pepper to taste
  • french bread
  • 2 tablespoons softened, unsalted butter
  • 1 teaspoon freshly minced garlic
  • Gruyere Cheese
  • Shredded Asiago Cheese
  • paprika

Instructions

  1. In a large stock pot over mid-high heat, melt 4 tablespoons butter. Stir in 1/2 teaspoon kosher salt, and all the thinly sliced onions. I used my food processor to slice my onions. It is very quick and easy. A Mandolin would work well too or you can slice them by hand with a sharp knife. Reduce the heat to medium and cook the onions for about 30-40 minutes until nicely caramelized. Be sure to stir them often and reduce the heat further if needed to avoid scorching.
  2. When the onions are nicely caramelized, add 6 cups water and 2 tablespoons beef base to the pot. Stir well to combine. Add in 1/2 cup Gallo Cabernet Sauvignon Wine and enjoy the wonderful aroma! Add 1 tablespoon Worcestershire sauce too. Toss in 2 sprigs of fresh parsley, 1 sprig of fresh thyme, and 1 bay leaf. For ease in removing the herbs later, I suggest bundling them with kitchen twine. Simmer the soup mixture over medium heat for about 30 minutes. Give it a stir every so often. This is where you'll be tempted to take a little taste test .
  3. After about 30 minutes of simmering, remove and discard the herbs. Add in 1 tablespoon balsamic vinegar and give it a taste. Add salt and freshly ground pepper as needed. Cover and keep warm over low heat.
  4. Turn oven broiler on high. Slice the french bread into thick slices that will fit in your serving dish. Mix up some garlic butter by combining 2 tablespoons softened butter with 1 teaspoon minced garlic and a pinch of salt. Spread this mixture on one side of the bread slices. Arrange the bread slices, butter side up, on a foil lined baking sheet and place under the broiler until nicely toasted. Remember to leave your oven door ajar while broiling and watch the bread closely so it doesn't burn.
  5. To serve, fill oven safe bowls with soup about 3/4 full and top each bowl with 1 slice of toasted garlic bread, 2 slices of Gruyere Cheese and 1/4 cup of Asiago Cheese. Place bowls on a baking sheet and place the baking sheet under the broiler to melt the cheese. Sprinkle with paprika and enjoy!

FAQs

How do you deepen the flavor of French onion soup? ›

A few sprigs of thyme and a bay leaf elevate the soup even more, but I take it a step further, adding a splash of fish sauce for complexity and depth—don't worry, it won't taste fishy—and a hit of cider vinegar to balance some of that oniony sweetness.

Why do you put baking soda in French onion soup? ›

The caramelized onions for this soup cook more quickly due to a pinch of baking soda but still have that deep, slow-cooked flavor. Topping the soup with hot, cheesy toasts prepared while the soup simmers, eliminates the need to bake the soup in specialty French onion soup bowls.

What is the best substitute for Gruyere cheese in French onion soup? ›

Swiss Cheese

Other Swiss types of cheese like Raclette cheese or Appenzeller Cheese or Dutch cheeses like Edam cheese or Gouda or Jarlsberg cheese from Norway or American Swiss cheese can all be substituted.

What is Panera French onion soup made of? ›

Sweet caramelized onions in a savory broth with a sherry wine vinegar gastrique, sea salt, topped with cheese and black pepper and sea salt croutons.

Why is my French onion soup so bland? ›

If you don't add enough salt, pepper, or other herbs and spices, the soup may taste bland.

What is the best wine to use for French onion soup? ›

Wine is optional to deglaze the pan and add flavour to the soup. I recommend a dry white or red wine, such as a good quality Pinot Grigio/Gris, Sauv Blanc, Sémillon, Chardonnay, Merlot or Pinot Noir. Generally, if you can't drink it, don't cook with it.

What kind of cheese is equivalent to Gruyere? ›

There are plenty of other premier cheeses that can serve as good substitutes for Gruyère cheese. Depending on whether you're melting cheese or adding more variety to your charcuterie board, you might consider Beaufort, Comté, Jarlsberg, Emmental, or Fontina.

Does Aldi sell Gruyere cheese? ›

Aldi carries some of my favorite cheeses, like Gruyere, Manchego, and Irish cheddar. The grocery-store chain also stocks other staples, like cured meats and loaves of bread.

What cheese can I use instead of gruyere in Dauphinoise? ›

Lift off the foil and sprinkle the cheese, if using, over the top – though it's not very French, you could substitute the gruyere for parmesan (in which case, use a little less) or even a mild cheddar, if you prefer.

Why did Panera get rid of French Onion Soup? ›

2019 was a year of food news for Panera, not all of it positive. First, it removed the French Onion Soup, a staple on the menu for over 20 years, to make room for seasonal menu items in June. Then, it was revealed the brand was heating up frozen dishes.

Why do French people eat French Onion Soup? ›

The Onion Soup, a traditional and warming dish

It has even become a trendy dish that tourists are eager to try to experience French gastronomy. However, onion soup is in fact not part of French people's daily meals. It was originally meant to be eaten after a family reunion in the middle of the night to cure hangovers

What ethnicity is French Onion Soup? ›

The classic French onion soup gets its name from its country of origin: France. After making its debut in the 18th century, it has become a national treasure. During ancient times (and still today), onions were cheap and easy to grow, and hence, readily available.

How do you add depth of flavor to soup? ›

"If your broth is lacking in savory richness, try adding roasted onion, tomato paste, mushrooms, seaweed, soy sauce, or miso. These ingredients add umami flavor and depth to broth," she says.

How do you doctor up canned French onion soup? ›

To elevate the canned version, quickly saute fresh onions, instead. Cook the thinly sliced onions in butter until they start to soften and take on a golden brown color, which indicates their sweet taste. The process only takes a few minutes and infuses French onion soup with a rich, decadent taste.

How do you get the most Flavour out of onions? ›

Submerge Them in Cold Water

Soak them for at least 15 minutes (longer is even more beneficial), properly drain, and eat away! Submerging them in cold water takes away that intense, sharp bite from the raw onion. The cold water helps the enzyme that causes onions to have their pungent flavor to leach out.
