How and Why I Created This Recipe

A special event was about to take place at my nephew's school, every student had to bring something sweet or savory from home and that’s how it all started.

My nephew loves chocolate and I love making him happy, so I thought I'll make him some brownies, some Chewy Gooey Eggless Brownies!

As much as he loves brownies, he asked me to make an eggless dessert. I asked, “how come you didn’t ask for brownies?” He told me about his friend who is allergic to eggs and mostly misses out on the good stuff served at parties. My nephew is just so sweet!

That day I knew how considerate my nephew is and he made me feel proud of him. What he didn't know is that I've never made eggless brownies before, and this will be a challenge.

I really wanted him and his friend to enjoy this dessert and decided to work hard and give my best in making delicious eggless brownies.

This recipe (after a few modifications) worked like a charm. I was so happy to introduce it to my nephew's friend.

The feedback made me humble, everyone loved my Chewy Gooey Eggless Brownies, and not only that, but the most important part was that my nephew's friend didn't feel left out, that was my prize.

I am sharing this recipe here for everyone to enjoy the best and most asked for dessert with family and friends.

What You Need to Make Eggless Brownies at Home

Like I mentioned above, all you need are pantry staples to quickly whip up these delicious brownies. Here’s everything you need to make them at home:

All-purpose flour: You only need simple all-purpose flour to make this recipe. No need for any special cake flour to make the best brownies ever. Told you this recipe only needs ingredients you most likely already have at home.

Bananas: This is the secret ingredient that makes this recipe incredibly moist and tender. All you need is ½ cup of mashed bananas to get going.

Sugar: We’ll be using white sugar to sweeten the recipe and also help with the moistness.

Hot water: This helps bring all the ingredients together in the batter while mixing.

Butter: We’ll be using melted butter in this recipe.

Chocolate chips: I’ve used semi-sweet chocolate chips but this recipe is incredibly versatile and you can use whichever ones you like, such as dark chocolate or milk chocolate chips.

Vanilla extract: We only need a teaspoon of vanilla extract to take these brownies to the next level.

Baking soda: We’ll be using this since this recipe requires bananas as the special, secret ingredient.

Baking powder: This is the leavening agent that’ll give your brownies the perfect crumb texture.

How to Make Eggless Brownies – Step by Step

Making the world’s best eggless brownies at home is simpler than you think! Here’s how to make them step by step:

Start by preheating your oven to 350F or 180C. Next, line an 8 by 8-inch pan with parchment paper and set it aside.

Now take a bowl and sift the flour, baking powder, baking soda, and salt into it. Sift the flour with baking powder at least twice to make sure that the baking powder is mixed well.

Next, take a microwavable bowl and add the chocolate chips and butter to it. Melt them in the microwave and set them aside.

Take a different bowl and add the sugar, mashed banana, two tablespoons of hot water, vanilla extract, and the melted butter and chocolate mixture to it. Whisk it all well together.

Now add the flour mixture to the already mixed wet ingredients and fold it in. Make sure to not overmix it.

Time to bake! Pour the brownie batter into the previously prepared pan. Gently tap the baking pan on the table to remove bubbles if they have formed to achieve an even surface.

Bake the brownies in the oven for 25 minutes or until a toothpick or cake tester comes out with very few crumbs.

Leave the brownies to cool in the baking pan. Don’t touch the surface of the brownies while they’re cooling down.

When your brownies have cooled down, refrigerate them for an hour before cutting and serving.

FAQs

What happens if you don't use eggs in brownies? ›

Is it okay to make brownies without eggs? Without eggs, baked goods will become a little thinner and not rise as much in the oven. As long as you replace the moisture from the egg with milk, banana or applesauce, you can make brownies without eggs. And yes, this recipe makes thinner brownies than normal.

What is the difference between chewy and fudgy brownies? ›

Fudgy brownies are moist, dense and gooey, with almost the texture of fudge, but not quite as compact. Chewy brownies are dense (like fudgy brownies), but have a little more “bite” to them or elastic texture when you chew them.

What can you replace eggs with in brownies? ›

OIL, WATER & BAKING POWDER

You can whisk 1 teaspoon of vegetable oil, 2 tablespoons of water and 2 teaspoons of baking powder together to replace each egg in baked goods like cookies, brownies or quick breads.

How do you keep brownies soft and chewy? ›

Using airtight wrappings (including using plastic wrap right against the brownies) is key to keeping your brownies fresh, whether you're keeping them at room temperature for short-term storage, or planning to freeze them so you can have a fresh brownie ready whenever you need it.

What is a substitute for eggs in Ghirardelli brownie mix? ›

A popular substitute is applesauce. Use 1/4 cup applesauce in place of one egg. Enjoy! If the eggs are for the purpose of making it less heavy and more cake like, you can try baking powder.

How much milk to substitute for one egg? ›

Using a 1/4 cup of milk or yogurt in place of eggs is perfect for baked goods where moisture is key, such as cakes or muffins.

Are Ghirardelli brownies chewy or fudgy? ›

Ghirardelli perhaps had a better chocolate flavor than Pillsbury but had dry edges. Otherwise, those brownies had an excellent texture with a fudgy center, and I thought that the addition of chocolate chips was a great touch.

What makes brownies fudgy vs cakey? ›

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. So add more fat—in this case, butter and chocolate. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you're going fudgy or cakey.

Will Gooey brownies set? ›

It can be difficult to resist a warm, gooey brownie straight from the oven, but letting the brownies cool for at least an hour before cutting them helps the brownies set in the middle, especially if you're following a recipe for fudgy brownies.

Can you use mayonnaise as an egg substitute in brownies? ›

3 tablespoons mayonnaise: These brownies came out moist and tender. ¼ cup of mayo was slightly too greasy, but 3 tablespoons was perfect.

What does applesauce replace in brownies? ›

Most brownie mixes—including our taste test winner, Ghirardelli Chocolate Supreme—require the baker to add oil, water, and eggs. Some of these box mixes recommend applesauce as a substitution for the oil to cut fat.

Can I use sour cream instead of eggs in brownies? ›

SOUR CREAM can also be used in place of yoghurt. Since sour cream has a higher fat content it can actually mimic the fats in an egg and make our recipe extra rich and moist. One egg can be replaced by ¼ cup of sour cream. It acts as just the perfect egg substitute!

Why aren't my brownies chewy? ›

Chewy brownies must be slightly under-baked. One of the top mistakes to avoid when making brownies is waiting until there's no more crumbs on the toothpick to pull the pan from the oven. By that point they're close to over-baked, and you will lose out on that chewiness you want.

Why do my brownies always turn out gooey? ›

Problem 2: My brownies are too GOOEY

If you think about it, the ingredients that create that fudgy texture - the chocolate and butter - are completely liquid when hot, but solid at room temperature. We would never attempt to slice a brownie less than 2-3 hours after baking - it'll be a gooey mess.

How to make box brownies chewier? ›

If you can't imagine not following the package directions, think again and try melted butter in place of the vegetable oil. The fattiness of the butter works similarly to the milk in the previously suggested swap — it makes the batter denser and the brownies chewier.

Can you eat brownie batter without eggs? ›

Is it ok to eat raw brownie batter? Traditional brownie recipes have raw eggs and raw flour in them, so they are not technically safe to eat. This brownie batter is eggless and the flour is heat treated, so it is safe to eat!

What to do if you are one egg short? ›
