Requiring only 3 ingredients, the Strawberry Bellini is a super simple co*cktail that is sweet, fruity, and bubbly. It’s perfect forbrunch with friends, for starting off a bachelorette party, or for a romantic date.
It’s also a super versatile co*cktail where most of the key steps can be made in advance. So then, all you have to do right before serving is to pop and pour in the bubbles.

What is a Bellini? Is a Bellini the Same as a Mimosa?
The Bellini and mimosa families of co*cktails are very similar to each other. Both contain a fruity component and a bubbly boozy component (that is typically Prosecco wine but can also be Champagne or Cava). Also, some versions (like ours) add a touch of simple syrup to sweeten up the co*cktail.
However, a Bellini is not the same as mimosa. The main difference between the two is that mimosas are usually made with the juice of the chosen fruit (either peach, orange, or strawberry, etc). Whereas, Bellinis have a thicker consistency since it uses the whole fruit in puree form.
What is Prosecco? Can I Substitute It with Champagne or Other Sparkling Wines?
Prosecco is an Italian sparkling wine similar to French Champagne or Spanish Cava. It can be substituted by any of those other two similar sparkling wines.For this recipe, we recommend choosing a medium dry or a medium sweet Prosecco (known as Extra Dry and Dry) to complement the sweetness of the fruit.
If you want a sweeter co*cktail, choose the Medium Sweet Prosecco. And if you really want a super sweet co*cktail, opt for a sweet Prosecco (also known as Demi-Sec).
If you select the Dem-Sec, then omit the simple syrup.
Ingredients and Prep Work Needed to Make the Strawberry Bellini
- Strawberries — Fresh is always best but frozen will do. Prep the strawberries beforehand washing them throughly. Remove the stems and leaves. And then, cut in quarters.
- Prosecco
- Simple syrup — If your strawberries are not very ripe, you’ll definitely want to include the syrup. It can be purchased at the stores or easily made at home.
How to Make a Strawberry Bellini co*cktail
1 — Blend the strawberries and simple syrup until smooth in a food processor or blender.
2 — Using a fine mesh sieve, strain the strawberry mixture into a glass or jar to remove as much of the seeds as possible.
3 — Pour about 2-3 tablespoons of the the strained strawberry puree into each Champagne flute.
4 — Top up each glass with Prosecco.
5 — Mix the puree and Prosecco together, gently to avoid breaking up the bubbles.

Cut a couple of strawberries into thin slices.
Then, cut a small triangle into the base.
Sit the strawberry on the brim of each glass as garnish.
Recipe Notes and Tips
Using frozen strawberries for the puree:
If you’re using frozen strawberries, make sure to thaw beforehand. You’ll want to have a smooth puree instead of a slushy. If you aren’t getting a smooth consistency, then correct with more simple syrup.
Omitting the simple syrup:
You can omit the simple syrup if using sweet Prosecco or Champagne or adjust the measurement according to your preference.
How to get a very chilled drink:
Bellinis are best served as cold as possible. For a perfectly chilled drink, chill the fruit puree and the Prosecco in the fridge. Also, chilling the Champagne flutes in advance in the freezer will ensure the co*cktail stays cold even longer.
What if the drink separates:
It is normal if the strawberry puree separates a bit from the Prosecco. All you need to do is gently stir it with the bar spoon.

- 1 bottle Prosecco wine chilled
- 2-3 tbsp simple syrup or less depending the strawberry ripeness
